Bolos de Arroz are a beloved Portuguese treat - light, fluffy, and subtly sweet, with a hint of lemon that makes them irresistible. Crispy on the outside and soft on the inside, they’re a comforting taste of home in every bite.
Ingredients
- 1 stick (1/2 cup) butter, softened
- 1 1/4 cup sugar
- 2 egg yolks
- 3 whole eggs
- Zest of half lemon
- 1/2 cup milk
- 1 cup rice flour
- 1 1/2 cups regular all-purpose flour

2 teaspoons baking powder
- Powdered sugar, for sprinkling
- Paper baking cups
Instructions
1. Preheat oven to 355°F. Line a baking sheet with paper baking cups.
2. In a large bowl, mix together the softened butter and sugar using a hand mixer
until light and fluffy.
3. Add the egg yolks and blend, then add the whole eggs and blend again. Mix in
the lemon zest.
4. Pour in the milk and blend until smooth.
5. Add rice flour, then blend.
6. Add all-purpose flour then blend.
7. Add baking powder, then blend. The batter should be thick.
8. Transfer the batter into a piping bag or a Ziplock bag with a corner cut off.
9. Fill each paper baking cup about halfway. The batter will rise during baking.
10. Bake for 30 minutes.
11. Allow to cool slightly, then sprinkle with powdered sugar before serving.
